Our Wedding Cheese Tower Story

here is why we ditched the traditions and cut the cheese on our wedding day.....

 

The Cheesy Hunt

thinking outside the box has always been a goal. nothing better than coming up with fun and new ways to do something that has been DONE time and time again. a wedding cake wasn't....us. weddings should represent you, and nothing said more about us, than this. 

 

after visiting mars cheese castle several times over the year going back and forth to kenosha, WI, decided to ask about creating this dream with me. they had done something similar before, but not often. after work, i went to the counter and asked to try the most popular cheeses. i met with mike shipmen {cheesemonger} to figure out which wheels would work best.

cheese cutting ceremony

we created an entire experience around this epic cheese tower, cutting the cheese immediately after the ceremony. to kick off the celebrations we CHOSE 70's hits, sign, sealed and delivered & dancing in the Moonlight TO BE Playing AS my older brother BEGAN HIS TEAR JERKING SPEECH. capturing 180 guests attention, before the bar opened was key (HIGHLY SUGGEST THIS).

after cutting the cheese, the tower made its way to the harvest table for all to enjoy.

AFTER TAGGING AND POSTING ABOUT THIS EPIC EXPERIENCE, we began TO FOLLOW WISCONSIN CHEESE ON INSTAGRAM. THEY POSTED A STORY, SEARCHING FOR CHEESE LOVERS AROUND THE COUNTRY. SO we did what all cheese heads would do.....WE ENTERED! A FEW MONTHS LATER WE FOUND OUT WE MADE THE CUT, WE WOULD BECOME WISCONSIN CHEESE AMBASSADORS.

CHEESE TIER DESCRIPTIONS 

Bottom Tier: La Bottega Artigiano Classico 

Style: Hand Crafted Homemade

Second Tier: Saxon Big Ed's Gouda 

Style: Gouda

The 90-day aging process takes wheels of Big Ed's through three aging cellars, controlled for temperature and humidity, where the unique flavor characteristics emerge. 

 

Third Tier: Roth Prairie Sunset

Style: Gouda

 

Their Description: Driving home from the creamery one evening, we saw the sun slowly descend over the prairie with the sky lit in rich ochre hues. That’s when our thoughts turned to the color and soul of the American Midwest. Prairie Sunset. This classic table cheese embodies it all — humble, friendly and reliable, yet a star in its own right. Sweet, approachable flavors with undertones of butterscotch make this Wisconsin original a versatile and lovable cheese.

 

Top Tier: Carr Valley Sid's Bahl Baby Swiss

Style: Swiss

 

Their Description: This swiss cheese is semi-soft, sweet, and nutty. It is made in a wheel, using the old Bahl Baby Swiss family recipe.
